The word tarn comes from the old Norse word tjorn meaning pond, and is used in the Cairngorms to describe the small mountain spring water lochs, some of which have existed for over 10,000 years, forming in the last ice age. Many of these are surrounded by peat, producing ancient sweet and earthy flavour bricks that inspired the profile of this expression from Tomintoul. Which handily comes in a one-litre bottle so there's more to enjoy.

Nose: Smoked heather, green fruit, toasty cereals, white pepper, and caramel.

Palate: Flamed citrus peel, roasted nuts, vanilla, earthy barley, and cinnamon.

Finish: Bonfire embers and orchard fruit.
